A Buyer's Guide to Guar Gum

If you're new to sourcing guar gum, the terminology alone can be confusing — split, korma, food grade, industrial grade, cps, mesh size. This guide walks through what guar gum actually is, how it's processed, and the specifications worth asking your supplier for before you commit to an order.

What Is Guar Gum?

Guar gum is a natural hydrocolloid extracted from the endosperm of the guar bean (Cyamopsis tetragonoloba), a legume grown widely across Rajasthan, Gujarat and Haryana in India. Once dried, the guar seed is split, and the endosperm — the gum-yielding part — is separated from the germ and husk. That endosperm is either sold as-is (guar split) or ground further into guar gum powder.

What makes guar gum commercially valuable is its ability to thicken water at very low concentrations. A small quantity mixed into water dramatically increases viscosity, which is why it shows up in everything from ice cream to oil well fracturing fluid.

From Bean to Powder: The Processing Chain

  1. Guar beans / pods — harvested and dried in the field.
  2. Guar seed — threshed out of the pod, cleaned and graded.
  3. Guar split (guar korma) — the seed is de-husked and split, separating the gum-rich endosperm from the germ and husk. This split can be sold directly as a raw material, or roasted into "roasted korma" for feed use.
  4. Guar gum powder — the split is milled to a fine powder, sieved to a target mesh size, and — for higher grades — treated to boost viscosity and hydration rate.
  5. Guar meal — the husk and germ left over from splitting aren't waste; they're high-protein by-products sold as cattle and poultry feed.

Food Grade vs. Industrial Grade

The same base powder can be processed and tested differently depending on the end use:

  • Food grade — used as a thickener, stabilizer and binder in dairy, bakery, sauces and processed foods. Requires food-safety testing (microbial limits, heavy metals) and typically FSSAI/HACCP/ISO 22000 documentation from the supplier.
  • Industrial grade — used in textile sizing, paper manufacturing, explosives, and — the single largest industrial application — as a viscosifier in oil and gas well fracturing fluids. Specs here focus more on viscosity performance and hydration speed than food-safety parameters.
  • Pharma / cosmetic grade — used as a tablet binder/disintegrant and in personal care formulations, with tighter purity and particle-size requirements.

Specs Worth Asking For

Whichever grade you need, ask your supplier for a certificate of analysis covering:
